Removing the fat and salt from a recipe and keeping it tasty is not easy. As you are reading this book you are probably thinking "how is it possible to prepare delicious dishes without the use of fats and salt?" You may have noticed that most of the other "healthy", "light" and "low fat" cookbooks have used some fats and salt to enhance the flavor. We have eliminated those additions completely and kept all the color, texture, and flavor!

I was inspired to write Slim to Shore as I reached my 50th birthday. Having decided it was time to pursue a more healthy lifestyle, my quest began by spending three informative, invigorating weeks at the National Institute of Fitness (NIF). There I learned the basics of eating more and healthier foods. With these basics under my belt, I was able to shed twenty-five pounds in eight months, while consuming more of the right foods, and feeling better, more energetic, and happier.
As I began research for Slim to Shore (my sixth book) I discovered, in light of my personal health commitment, there were almost no truly low fat cookbooks on the market. Readers beware of the words "low" and "light" in a cookbook's title. If you see whole eggs, margarine, or oil, stop right there and put that book back on the shelf --it's not going to do you any favors.
Armed with a mission, I began Slim to Shore; a collection of Caribbean charter yacht recipes that were adapted for a healthier life style. After undertaking considerable research, I chose only recipes low in fat, sugar, cholesterol, and sodium. Every recipe provides under 20% calories from fat, to keep your daily intake low. This percentage is an average based upon my personal experience with NIF's 10% recommendation and the USDA recommendation of 30%.
Slim to Shore takes you from breakfasts to desserts, from grocery store to final presentation. Along the way, you will be creating dishes that are delicious as well as ultra-low in fat, sodium, cholesterol, and sugar. You'll find complete nutritional information as well as workable substitutes, week-long menus, even shopping lists!
